Quiet logical that priest chitin +7 > Priest FP +7...However it would be a whole other story if the FP has a higher +.
No question take the chit. If the FP was +8, maybe then, I still wouldn't without good uniques and maybe a goblin chitin pauldron. Fp +9 is a gogo.

FP +8 if you can afford it. If you cant, stick with the chitin +7
chitin +7 is obviously > the fp +7.

chits +7 would be much better than fp +7.
you're comparing two very unequal (in prices) based items.
Fp +8 and Chits +7 would be a closer comparision, in that case, i would take chits pauld + pads + helm, and fp gaunts + boots

OK you gain 103 defense, not bad, but did you notice the stat requirements? Look at the pauldron: you need 3 more in STR and 16 more in INT. So basically you have 19 less stat points in health, or about 300 less HP (not to mention that the additional points in health would help you recover 19 defense, because you gain 1 defense for every stat point above 100). So, net you gained 84 defense against a loss of 300 HP. I don't think it's worth it.
Now compare the FP +8:

The FP +8 requires 101 STR and 158 INT, vs 102 STR and 172 INT for the chitin +7. So, you have 15 more stats in HP with the FP +8. On top of that you gain another 15 stat points in health because you have +8 / 15 instead of +7 / 12. So, net gain of 30 points in health, or about 450 more HP with the FP +8. The defense difference is now much less: chitin +7 defense is 442, while the FP +8 defense is 374 + 15 (for the additional stat points in health) = 389, so basically only 53 more ac for the chitin.
Would you trade 450 HP points for 53 more defense? I would not.
PS: you could boost HP at the expense of losing a bit more defence by using a goblin full plate pauldron instead of the FP +8.
